Cranberry Salsa
Recipe from “Discover a World of Flavor with the Exceptional Cranberry” at a Private Reception at Ocean Spray’s Cranberry Bog Exhibit at the Epcot International Food & Wine Festival on September 27, 2013
Ingredients
- 12 oz whole cranberries
- 1/3 cup sugar
- ¼ cup diced green peppers
- ¼ cup diced red onion
- 1 seeded and chopped jalapeño pepper
- 1 tablespoon grated fresh ginger
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 cup chopped fresh cilantro
Preparation
- Add cranberries and sugar in to a food processor and pulse until coarsely chopped. Add in green peppers, onions, chopped jalapeño pepper, grated fresh ginger, lemon juice, and salt into the food processor and pulse until combined. Remove from processor and mix in the chopped fresh cilantro. Refrigerate until ready to serve
Yield is 2.5 cups
